Velvet Poker House elevates the classic steakhouse with a focus on premium Australian beef, dry-aged to perfection and grilled over open flames. Every cut is selected for its marbling, flavour, and texture, then handled with the same precision our dealers bring to the card room.

Our sourcing begins with select Australian farms known for consistent marbling and depth of flavour. The dry-aging process enhances tenderness and develops a concentrated, nutty character that cannot be rushed. Open-flame grilling then imparts a smoky, charred crust while keeping the interior beautifully succulent.

A Symphony of Wine: Our sommelier-curated wine list features both Old World classics and bold Australian vintages, designed to complement every dish. The extensive cellar includes rare and allocated bottles, with pairing recommendations for each steak cut and private dining wine service available.

Each steak is dry-aged in-house, grilled over open flame, and finished with house-made accompaniments. Our chefs recommend a preferred doneness, but every cut is prepared to your taste.
